Harira is the traditional soup of Maghreb (Morocco and Algeria). It is also quite possibly the best soup in the world. It's usually eaten during the Muslim holy month of Ramadan, but can be eaten any other day of the year for that matter.
This is my mother's recipe for Harira; the recipe for this soup varies by region. This nourishing and hearty soup is without a doubt, a family favorite around my house.
One zucchini squash
One small potato
2 small onions
2 sticks of celery
6 small tomatoes (i usually use plum tomatoes)
Half a bunch of cilantro
¼ teaspoon black pepper, 1/8 teaspoon ground red pepper, 1/8 teaspoon cinnamon, 1 teaspoon of salt
3 tablespoons vegetable oil
2 tablespoons tomato paste (add more if needed)
One sprig of fresh mint
Small piece of green pepper
Wash and peel the squash, carrot, potatoes, and onions. Chop them into medium-sized chunks and add them to a large saucepan.. Wash celery and chop into chunks; add to the saucepan. Chop all the tomatoes using an electric chopper and add them to the saucepan. Cover everything with water. Wash cilantro, chop 1/2 of it, and add to the saucepan. The other half will be used later on. Add spices, salt, and oil.
Cover the saucepan and cook for 1 hour on medium/high heat.
When it’s done, set it aside and let it cool.
Then puree it in a blender, two cups at a time.
When you puree the last two cups of the soup, add tomato paste, cilantro, and mint to the blender, and puree altogether.
Pour the soup back into the saucepan(or you can use a different one), add the green pepper, and then boil for 5 minutes.
