Who would have ever thought that two ingredients such as spinach and potatoes would go SO well together?
When I was little, this was the only way my mother could get me to eat spinach so this recipe is definitely a keeper.

Ingredients:
One 10oz. package of spinach
3 potatoes
4 garlic cloves
3 tablespoons of vegetable oil
3/4 teaspoon salt
1/8 teaspoon red pepper
1 ½ teaspoons paprika
1 egg
Directions:
Wash the spinach thoroughly. Peel and chop the potatoes into small cubes. Peel and grate the garlic.
In a medium saucepan, add oil, spices, garlic, and the potatoes. Add enough water to just about cover the potatoes and cook for 10-15 minutes on medium heat.
Then, add the spinach to the potatoes and cover the saucepan with a so that the spinach will wilt.
After about 10 more minutes, everything should be done. Crack an egg over it, stir lightly.
