{Guest Post} Chocolate Moelleux aka Chocolate Lava Cake

Let’s make this snappy. This is the holiday season and chances are you’re going to have guests around at one time or another the following weeks. A moelleux is the perfect dessert to close off the evening. Warm and wholesome, attendees will go quiet as they take the time to savour its richness. What better way to celebrate peace, love and friendship?


I’m a cake lover myself. Pie could never satisfy that sweet tooth as good as cake did. Add chocolate and you’ve got a complete winner! This particular chocolate treat crossed my path by accident. I ordered it unwittingly a few years ago at a company dinner, not knowing what it was. Let’s just say I don’t regret going with a whim.


You cannot taste this winner only once. That’s why I didn’t let myself get distracted by disbelievers who told me this recipe was just too difficult to get right. I found a recipe from a Belgian tv chef and tried it. It has yet to fail me. Give yourself and your loved ones a great self-made gift this holiday season, and try to let magic happen, following the formula as laid out down below.

Chocolate Moelleux aka Chocolate Lava Cake

Yield: 2 moelleuxs

Ingredients:

50 g dark chocolate/1.76 oz.
55 g butter/ 1.94 oz.
25 g all purpose flour/0.88 oz.
50 g sugar/1.76 oz.
2 eggs


Directions:

Grease two mini pudding moulds. Sprinkle some cocoa powder over the butter and shake the moulds to evenly coat them.
 

Pre-heat your oven to 200°C/400°F.

Whisk 1 egg and 1 egg yolk. Add the sugar and whisk. Add the sifted flour and whisk. Melt the butter together with the chocolate. Add the chocolate mixture to the egg mixture and whisk.

Divide the dough over the two moulds and bake for 10-12 minutes. Keep a close eye to them as you really do not want to overcook them!
